Simply the Best Salad Dressing (with a Side of Ghosts)

They say relationships are like recipes… well I say that. If you start with good ingredients, you’ll end up with something magical. But what happens when you throw in an unexpected ingredient, like, say… ghosts?

A year ago, I went viral for dumping a guy because he wouldn’t believe me if I saw a ghost. And now, karma’s decided to make me the punchline.

I got a fresh start dating this guy… and everything seemed promising, like the base of a perfect salad dressing: lime juice for zing, fresh dill and cilantro for flavor, and creamy nonfat Greek yogurt to bring it all together. Things were getting serious. I’m thinking, “yes, this is it! This guy could be the EVOO to my perfectly blended life.” (spoiler… my life is far from perfect. In fact, the opposite!) 

And then, one night, he casually mentions he sees ghosts.

I froze. Was this the garlic in the dressing—necessary for depth, but a little overwhelming when you add too much? “What do you mean, you see ghosts?” I asked.

“Oh, you know, they visit me at night. Sometimes I wake up with a white hand on my shoulder.”

Excuse me, what?!

He went on to tell me about nightly hauntings, saged rooms, and family chants. At this point, I was questioning everything (mostly his sanity). Was I blending my life with a beautifully balanced dressing or tossing all my hopes into a cauldron? Did I manifest this? Was I now the idiot husband in a horror movie who ignores red flags?

The worst part? He was dead serious (pun intended). And suddenly, I realized this relationship was not the perfect creamy dressing—it was oil and vinegar just PRETENDING to get along.

When it comes to salad dressing, you need harmony. The zing of lime. The boldness of garlic. The freshness of cilantro and dill. But when your boyfriend brings ghosts to the table, it’s like adding cinnamon to a savory dressing—certifiably insane.

So, I had to let him go. And I realized… life is too short to be dealing with the undead. I’ll see them soon enough. Stick to the recipe for something fresh, vibrant, and sane.

Here’s how to make Simply the Best Salad Dressing:

• 1/4 cup fresh dill (no ghosts hiding in the leaves, please)

• 1/4 cup fresh cilantro (unhaunted, preferably)

• Juice of 1-2 limes (fresh, zesty, and unburdened by hexes)

• 1/4-1/2 cup nonfat Greek yogurt (creamy and commitment-ready)

• a bunch of green onions, chopped (sharp and honest, like your gut instinct)

• 2-3 cloves if garlic (adds depth but won’t overwhelm—learn from my mistakes)

• 2 tbsp extra virgin olive oil (smooth and balanced, no separation anxiety)

• Salt and pepper to taste

Blend everything together until smooth and creamy. Unlike a haunted boyfriend, this dressing gets better the longer it sits in your fridge.

Serve it over your favorite greens, roasted veggies, or as a dip. And remember: just like a good dressing, relationships should be fresh, balanced, and ghost-free.

I love this salad dressing. It’s that simple.

INGREDIENTS:

Prep Time 15 minutes | Cook Time 15 minutes

SKILLET CHICKEN 

SALAD DRESSING / SALAD INGREDIENTS 

  • Lettuce i used — equal parts iceberg, cabbage, and spinach 

  • Brunch of Green onion, roughly chopped

  • Fresh Dill, roughly chopped

  • Fresh Cilantro, roughly chopped

  • 1 lime

  • 2-3 gloves of garlic 

  • 1/2 of an avocado 

  • 1 heaping spoonful of nonfat greek yogurt

  • drizzle of extra virgin olive oil

  • water (just a tiny bit, as needed if it is too thick) 

  • salt & pepper 

EQUIPMENT

INSTRUCTIONS

  1. Season your chicken.

  2. Heat skillet with extra virgin olive oil. toss in minced garlic for a minute. 

  3. Add chicken to skillet. About 4-5 minutes for each side. 

  4. Set aside

  5. In bowl, combine your lettuce and chop! Chopping the lettuce just makes the salad so much better. 

  6. Add remaining ingredients into a blender and mix! 

  7. Add to salad & toss. Add chicken. 

  8. Enjoy!
