Marshmallow Gooey Fudgy Brownies Recipe

INGREDIENTS:

• 1 cup (227g) butter, browned

• 1 cup (90g) Dutch-process cocoa powder

• 4oz (113g) dark or semisweet (60% cacao) chocolate, finely chopped

• 1 tsp instant espresso (or 1 Tbsp instant coffee)

• 1.5 cups (300g) white sugar

• 1/2 cup (100g) brown sugar

• 1 Tbsp vanilla extract

• 4 eggs

• 1 cup (120g) flour

• 1 tsp coarse kosher salt

• 1 cup small marshmallows

• Optional: 1 cup chopped chocolate, chocolate chips, walnuts, or dried cherries

INSTRUCTIONS

1. Preheat Oven: Set to 350°F and line a 9x13” pan with foil or parchment paper for easy removal.

2. Prepare Chocolate Base: In a heat-proof bowl, mix cocoa powder, chopped chocolate, and espresso powder.

3. Brown the Butter: Melt butter in a saucepan over medium-low heat. Stir frequently until the milk solids brown and the smell is nutty (about 5-10 minutes). Pour immediately over chocolate mixture and stir until smooth. Let cool.

4. Whip Eggs & Sugars: In a stand mixer or with a hand mixer, beat white sugar, brown sugar, vanilla, and eggs on medium-high until light and fluffy (4-5 minutes for fudgy brownies).

5. Combine Mixtures: Reduce mixer speed to low and pour in the chocolate-butter mixture until incorporated.

6. Add Dry Ingredients: Gently fold in flour, marshmellows, and salt with a spatula. Fold in marshmallows and any optional add-ins.

7. Bake: Spread batter evenly in the pan. Bake for 25 minutes, or until the surface is glossy and just set. Do not overbake!

8. Cool and Slice: Let cool for at least 30 minutes before slicing.
