The Best Chocolate Chip S’more Cookie Recipe: A Journey of Expectations and Disappointment

Ah, chocolate chip s’more cookies – the epitome of comfort, nostalgia, and a little bit of indulgence. But if you’re anything like me (I pray you’re not), baking can sometimes feel like dating. You start with high hopes, excitement, and that promise of something amazing. But then, sometimes, it crumbles – not unlike the process of a man who starts the week texting you “Good morning, beautiful!” and by Friday, he’s down to a quick “hi” with all the enthusiasm of a cracker.

So, here’s the recipe, and I won’t breadcrumb you.

Step 1: Gather Your Ingredients

To make these cookies, you’ll need:

Step 2: Start Strong (like my date)

Cream the butter and sugars together – this is the “Good morning, beautiful!” phase. The ingredients are blending, there’s fluff, and you’re feeling optimistic. Things are rising and expanding, and it looks like it’s going to be something pretty dang good.

Step 3: Add the Eggs. One at a time. Blend in between.

When you add in the eggs, everything seems to come together. There’s structure here, a little chemistry, kind of like the middle-of-the-week texts where he’s still trying – a little.

Step 4: Mix in the Dry Ingredients

Now, it’s time to blend the flours, cornstarch, baking soda, and salt. Mix until just combined to avoid overmixing – because things are about to change. This is where you need to be careful. If you stir too much, you might lose that fluffiness, and if you don’t, it might fall flat. This is Thursday. The excitement isn’t what it was on Monday; he’s maybe texted “hey” but without any punctuation..

Step 5: Fold in the Good Stuff (But Watch Out)

Here come the mini chocolate chips and walnuts.. These add-ins are all the good parts, the reasons you even started baking these cookies – the “sweet” part like the way he remembered your favorite restaurant.

Separate dough into 8 large balls, flatten balls one-by-one and add mini marshmallows to the center. Roll into a ball, covering marshmallows with cookie dough then flatten slightly and place on top of prepared baking sheet. Try to keep the marshmallows on the inside of the cookie, or they will melt and fall out of the dough.

Step 6: Date with Caution… I mean BAKE.

Scoop your dough onto a lined baking sheet, giving them enough space so they don’t bleed into each other. Slide them into the oven at 410°F… hot… I know… Just like him. I mean not him. He’s not hot. AT LEAST NOT ANYMORE. Just your oven is hot. NOT HIM. Bake for 10-12 minutes. OR WHATEVER. Now, this is the waiting game. You don’t know if the cookies will come out perfect or disappointingly underbaked – kind of like how he doesn’t care if you live or DIE.

Step 7: The Reveal

Out of the oven, these cookies should be golden brown around the edges, with melted chocolate and gooey marshmallows. But if you didn’t fold everything in right or took them out too early, you’re left with half-melted, sad cookies. Like me. And just like that man who once texted like he cared, your once-fluffy cookie dreams are deflated.

Allow the cookies (and your anger) to cool for 5 min, then place a Hershey's chocolate square in the center of the cookie.

But here’s the thing: these cookies can be amazing – warm, gooey, comforting. Unlike a breadcrumbing man, they’re worth the effort, and when made right, they’ll never leave you hanging. So maybe, let him go. Go bake these s’more cookies instead – they’ll be the sweetest company you need.

INGREDIENTS

Prep Time 18 minutes | Cook Time 12 minutes

INSTRUCTIONS

  1. Preheat oven to 410 degrees.

  2. In a large mixing bowl, cream together cold cubed butter, brown sugar, and sugar for 4 minutes or until creamy.

  3. Add eggs, one at a time, mixing well after each one.

  4. Stir in flours, cornstarch, baking soda, and salt. Mix until just combined to avoid overmixing. Stir in chocolate chips and walnuts.

  5. Separate dough into 8 large balls, flatten balls one-by-one and add mini marshmallows to the center. Roll into a ball, covering marshmallows with cookie dough then flatten slightly and place on top of prepared baking sheet. Try to keep the marshmallows on the inside of the cookie, or they will melt and fall out of the dough.

  6. They are bigger than you think! You will fit 4 cookies on one large cookie sheet. The dough makes 8 extra large cookies

  7. Bake for 9-12 minutes or until the cookies have spread and have turned golden brown. Allow the cookies to cool for 5 min, then place a Hershey's chocolate square in the center of the cookie.

  8. Brace yourself for the best cookie ever.
